Where have I come from, and where am I going?
In the rush of everyday life, I had somehow lost sight of myself.
Whenever that happened, talking with my grandfather helped me find my way back.
Now, a glass of Hatasho brings me back to where I began.
From here, I become myself again.

The Story Behind Hatasho
Hatasho was first created when I was a child, through the efforts of my grandfather and others around him. The impression it left when I tasted it at age twenty has never faded.
Our concept—“A sake for being true to myself, here and now”—grew from my own experience. Amid the rush of ordinary days, talking with my grandfather helped me return to myself.
I believe everyone has a place that feels truly their own. It may be the place you come from, the place where you stand now, or the place you are moving toward.
A glass of Hatasho brings you back to your beginnings. From here, I become myself. From here, something begins. That is the message carried in every bottle.
Neither the food we eat each day nor the places where we stand should ever be taken for granted. They are shaped by nature’s interwoven forces and by human care.
When sake is poured, each person’s story is shared. For me, sake connected my grandfather’s hopes with time around the family table.
To understand sake—from growing the rice to brewing the final bottle—is to understand the land that made it. Through Hatasho, I hope more people will discover what makes this place special.

A clean, refreshing sake with a gentle aroma and the unmistakable character of rice.
Revived in 2022 after fourteen years, Hatasho was created to let the character of rice shine.
Born as spring arrives, it carries a gentle, springlike fragrance and the softly sweet, floral aroma of rice.
It is never overly sweet. Fleeting notes of fresh produce and fruit give way to the refreshing lift of genshu, while the core character of the rice remains.
That clean freshness feels like breathing in the open air.
As the freshness fades, a natural sweetness—like the finish after a bowl of rice—lingers, then the aromas and flavors dissolve softly from the palate.
Enjoy it with small plates or a meal, and savor the full character of the rice.
